Sneaky Treat

I know I am late posting this but I finally got the pictures off the camera to post with it! But as I promised in my menu plan monday post - I am showing you our sneaky popsicles.

IMG_4327

So... I know Pamela at Keeping Life Creative posted about her sneaky smoothies. Well we too have sneaky smoothies but I put in lots more stuff to be sneaky... cabbage, carrots (a few baby ones or a full size one cut up), and then lots of fruit strawberries (with the green leafy tops), cantaloupe, apricots, blueberries, blackberries, etc. All the fruit is frozen so I don't add any ice. I do add some juice but usually use the V8 Splash (50% juice) that also has more hidden veggies in it.

So I make up a smoothie... we enjoy a small cup each (we have those great IKEA cups that come in fun colors) then with the rest (I make big batches so I can freeze either in smoothie size cups (I use the plastic restaurant cups that have a lid) or into popsicles.

I picked up a great popsicle mold at Bed Bath and Beyond in a end of the season (is there a season for popsicles?) for like $10... pricey still but it has been SO worth it.  So I put the extra smoothie into the popsicle mold and then we can enjoy popsicles that are all good stuff (I don't usually even add honey if I know the fruit is sweet).

IMG_4356
Rachel enjoying her sneaky smoothie pop (really she loves them - she was just sick of me taking pictures!)

I love to hear sneaky ways to get good stuff in our kids diets... do you? If so check out Keeping Life Creative and link up on Tuesdays (like I said I know I am late).

menu plan monday

It's Monday again and I am back to post my menu for this week.  I never did get back to post about our smoothie pops but I will try to do that this week.   Pamela Donnis (Keeping Life Creative)  has a blog link up each week on Tuesdays with sneaky snacks... how do you sneak good stuff into your kids (or your) diets???  I will be linking up my smoothie pops for that.

We followed last weeks plan pretty well. The day we were scheduled to have meatballs, mashed potatoes and gravy it was so hot (ok not SO hot but 82 - which when the day before was 74 it was shocking). So instead of that we had fresh fruit (watermelon, pineapple, strawberries and pear).

This week our plan:

Sunday - Pancakes (will have to post the recipe sometime) and sausage (yep for dinner)

Monday - Chicken Enchiladas with spanish rice

Tuesday - Manicotti with homemade bread (I lost the recipe again... hope I can find it) and salad

Wednesday - Meatballs and mashed potatoes with gravy (we are trying again!)

Thursday - Won Ton Soup  It does take a little bit of prep work... but oh my it is so worth it!  The broth is just fabulous to sip (especially if you are not feeling well).  I know it is kinda hot for soup but I had been thinking about making this again, so I am!

Friday - Red beans and rice with cornbread

Saturday - BBQ Pork Sandwiches with baked beans

What is your favorite combination of spices when you cook up your red beans?  Mine always seem kind of bland.  So please share your favorite recipe (or spice combo).

menu plan monday

mpm-1

This is the first time I have posted my menu plan here on this blog but I have been menu planning for about 2 years now possibly longer. There are times that I "forget"... I don't forget to eat but just don't have it all planned out for the week on Sunday.  I will say when I don't plan out the menu what we end up eating is not all that healthy, thus the reason I really try to have a menu plan each week.

So what are we having this week?

Sunday - Porcupine Meatballs (lunch) and then grilled hamburgers for dinner

Monday - Pork Chops (just pan grilled) with peas and carrots and mashed potatoes

Tuesday - Broccoli Beef

Wednesday - Relief Society activity - dinner will be served
Adam and the girls will have soup

Thursday - Meatballs (from the freezer) with gravy and mashed potatoes

Friday - Homemade Pizza (cheese and sausage/pepperoni)

Saturday - Relay for Life during the day so not sure what our plans will be for dinner

Breakfasts -
Cold cereal (not the healthiest but they do like {frosted} mini wheats) and I get it just about free with coupons
Eggs - these are always free - thanks mom (or I guess I should say thank you to her chickens!)
Healthy waffles  (our freezer is out so I will be making more this week)

Snacks/Dessert
Frozen Blueberries
Strawberries
Pineapple
Watermelon
Apples
Cheese Crackers
Smoothies or smoothie pops (watch for a post on Tuesday about them)

Do you plan out your menus?  Want to see what others have on their menu plan? Check out OrgJunkie

Moments that Matter blog train is arriving into the station...

Welcome to your next stop on the ScrapMatters [inter]National Scrapbooking Day blog train. This train has stops ALL OVER THE WORLD!!! You have probably just come from Maria of ScrapMuss Designs. That's the stop before this one. And now you've arrived in sunny, warm and beautiful Northern California at Krisi's Kreations!

Our NSD mega-collab at SM this weekend is called "Moments that Matter" and the whole theme of our celebration is all about those moments in our lives that really matter. At each stop you'll find a story about a Moment that Matters along with a freebie!! There are TONS of stops on this blog train, so you can pick up a LOT of goodies!!

Before I show you what I have for you I want to show you the kit...

mtm

Isn't that just the most beautiful thing and it is FREE with your $20 purchase at ScrapMatters (which is SO easy to do this weekend with all the fabulous grab bags in the store - including mine!)!  And since $20 is so easy... go for $30 and check out what you will get!  I created the cake slices in the download... 10 slices forms a whole cake. I created it without to many embellishments so you could personalize it more.

sm_mtm_printable

And then just a little preview of the two new items I have out this week:folder folder

OK, so back to the blog train!

The 'moment that matters' I've chosen to share is . . .  The birth of my first daughter.

I was very ready to have her, after all it was my first baby and I thought I was pretty uncomfortable and couldn't sleep.  The doctor was really concerned with how big she was going to be and sent me for an ultrasound, which showed that the baby was around 9 1/2 pounds but probably more. We decided to have a c-section (I thought that would be the easy method - boy was I wrong!) so it was scheduled for the following afternoon.  The surgery was delayed but finally I got to see her!

blog-example

This was the first time I saw my little girl... I heard her and saw a picture on the camera but this was when I saw her for the first time, and fell in love.

Your freebie on this stop is the mask I used on the photo above.

folder

**DOWNLOAD EXPIRED**

Link will be active until midnight Thursday night 5/6. Then all the blog train goodies are getting gathered up and put into the store!

Enjoy!!! And now you're off to the next stop on the blog train . . .

Have fun and HAPPY NSD!!!!  Be sure to stop by the store for 40% off until Sunday then 30% til Thursday!!!!
